Asparagus Pastries

Makes: 8 Ready in: 25 mins

These savoury pastries are quick and very easy to make, ideal for a light meal or serve them with drinks as a pre dinner nibble. Halve the amount if you are cooking for 2.

Ingredients

  • 2 sheets of frozen puff or flaky pastry defrosted
  • 16 asparagus spears, rinsed and trimmed
  • 1 tbsp good quality mayonnaise
  • 1 heaped tsp whole grain mustard
  • 1 cup grated tasty cheese
  • 1 egg lightly beaten- optional

    Method

    Preheat the oven to 200°C. Cut both pastry sheets in quarters and place on a greased baking tray.

    Combine the mayonnaise and mustard in a small bowl and spread the mixture evenly over each square of pastry then scatter each with grated cheese.

    Cut the asparagus spears in half horizontally and place 2 stalk ends and 2 spears into the middle of each pastry square. Lift the side corners and wrap them over the filling to enclose and press gently.

    Brush the pastries with beaten egg if desired and bake for 20-25 minutes until golden and crisp. Serve warm.

    Tip

    You could make this easy dish as a meatless main course with a salad and jacket potato for an easy weeknight meal, or add to a picnic basket as they are also good cold.
