Digestive Biscuits

Makes: 24 Ready in: 35 minutes

Digestives are a slightly crumbly, slightly sweet biscuit that are great with a slice of cheese, or spread with a thick layer of butter or even dunked in a cuppa. I use a food processor which not only chops the oats nice and fine but means I don't even have to dirty a mixing bowl.

Ingredients

  • 110g rolled oats or oatmeal – I pulse rolled oats in the processor to make a fine meal
  • 3 tbsp brown sugar
  • 110g wholemeal flour
  • 75g butter
  • A pinch of salt
  • ¼ tsp baking soda
  • 1 egg lightly beaten

      Method

      Pre heat oven to 190°C. Place the rolled oats in the processor and pulse to a fine meal. Add the flour, sugar, butter, salt and baking soda and pulse to combine. Add the egg and pulse to form a dough.

      Dust the bench with wholemeal flour and roll out the dough to approx 5mm thickness. Cut into circles with a biscuit cutter and place on a greased baking sheet. Re-roll the trimmings and when all the dough is used prick each biscuit 2 or 3 times with a fork.

      Bake in the pre heated oven for approximately 11 minutes. Until turning golden around the edges.

      Cool and serve plain, or buttered or with cheese or spread with melted chocolate and leave to set.

      Tip

      I sometimes include 75g of finely chopped hazelnuts or walnuts to the mixture which adds a nice nutty flavour.
