Easy Fruit Tarts

Makes: 6 Ready in: 35 minutes

These easy fruit tarts taste really good, look pretty and are so simple an 8 yr old can make them. I use apple most often as that is what we usually have available but sliced plums, pears, peaches, nectarines or preserved, drained stonefruit work well. 

Ingredients

  • 1 sheet of frozen puff pastry
  • 2 medium cooking apples, or other fruit, peeled, quartered and sliced thinly
  • 2 tbsp apricot jam
  • icing sugar to dust

      Method

      Preheat the oven to 200°C. Cut the pastry into thirds then cut each third in half to make 6 even sized rectangles.
      Prick the middle of each rectangle two or 3 times. Spread a little apricot jam into the middle of each pastry rectangle and then place 5 or 6 overlapping slices of fruit down the centre of the rectangle on top of the jam.
      Bake the pastries until the sides are puffed up and golden and the fruit, cooked if using fresh fruit. Heat remaining jam (a quick few seconds in the microwave will do it).
      Brush the fruit with the warmed jam to give it a glossy shine. Dust with icing sugar before serving and serve warm or cold. 

      Tips

      This is a really quick easy way to provide something really good for a morning tea, dessert or bring a plate event.
