Judith's Muesli

Makes: A big jar full Ready in: 35 minutes

My hilarious friend Judith developed this muesli when her girls objected to conventional toasted muesli which they found too hard to chew their way through. The addition of weetbix makes a much softer texture when the milk is added and kids love it. Judith passed away a couple of years ago, far too soon and with as little fuss as she could orchestrate, I love that her recipe is nourishing families still. Please make it and always call it "Judith's Muesli". 

Ingredients

  • 6 cups of medium rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 cup oil - canola, soy, coconut - something with a mild flavour 
  • 1/3 cup honey
  • 2 Tbsp molasses - optional
  • 12 Weet Bix, crushed 
  • 1 cup dried fruit e.g. a combination of sultanas, raisins, currants, apricots etc.  

        Method

        In a large bowl combine the rolled oats and coconut. Melt the honey, molasses and oil and stir through the rolled oats mixture till thoroughly combined.

        Tip into a roasting pan then toast the oat mix in batches in a roasting pan for around 10 minutes or until lightly toasted.

        When all the oat mix is toasted add the dried fruits and mix through. Crumble in the Weet Bix and store in an airtight container.

        Tips

        Add nuts and more exotic chopped fruit if desired.
