Almond Joy Fudge

Makes: 36 pieces approx Ready in: 15 mins + cooling

Studded with almonds this fudge is looks like mosaic when sliced. Its easy enough for kids to make and adults will love it, its also very quick– a godsend when you realise at 9 pm on Friday night you were supposed to drop something off for the school/kindy/church fundraiser in the morning – just be sure to save a piece or two to have with a cup of coffee.

Ingredients

  • 250g Dark chocolate – I use Whitakkers 62% cacao
  • 1 can sweetened condensed milk  - approx 395g
  • 60 g butter
  • 70 g packet whole blanched almonds, coarsely chopped
  • 1 1/3 cups desiccated coconut

Method

Line a 20cm square tin with baking paper. Two strips laid across eachother inside the pan in opposite directions is a quick way to line a square tin.

 Place a large bowl over a saucepan of gently simmering water, making sure that it doesn’t touch the water. Break the chocolate into the bowl and when it begins to melt, remove from the heat and stir until completely melted.

While the chocolate is melting place the condensed milk and butter in a small saucepan, heat gently, stirring until the butter is melted, remove from the heat. Add the butter and condensed milk and the almonds to the chocolate, then add 1 cup of the coconut and fold together. Pour the mixture into the prepared tin, smooth the top and scatter on the remaining coconut. Chill until firmly set.

When set remove from the pan and cut into squares.
