Peach Cobbler
Serves:Cobbler gets its name from the bumpy texture on top, it's an easy, cheap pudding that you can adapt to suit your own preferences.
Ingredients
- 4 large ripe peaches, peeled and sliced or a use an 800g can sliced peaches in juice, drained
- 1 cup sugar
- 1 tsp cinnamon
- 1 ½ cups flour
- 2 tsp baking powder
- ½ tsp salt
- 100g melted butter
- ½ cup milk
- 1 egg
- sugar for sprinkling
Method
Preheat the oven to 200°C. Grease an ovenproof pudding or pie dish. Place peach slices in a bowl with ½ the sugar and ½ the cinnamon.
In another bowl combine the flour, baking powder, remaining sugar and salt. Whisk together the melted butter, milk and egg and stir into the dry ingredients to form a stiff batter.
Spread half the batter in the pan, add the sliced peaches then spread over the remaining batter. If it is uneven and lumpy with the odd bit of peach showing through that will just add to its charm. Sprinkle with a little extra sugar if desired.
Bake 40-50 minutes or until golden, springy and when a knife inserted into the centre comes away clean. Serve warm with cream, ice-cream or custard.
Tips
Swap the peaches for plums, cherries, mixed berries or apply and feijoa with ginger instead of cinnamon.
