Moroccan Spice Mix

Makes: 1 x 20cm or 2 x 10cm Ready in: 11/2 hours

This is a versatile seasoning mix that adds a complex savoury flavour that is aromatic rather than "hot" and not too cinnamon-y. It works well with beef, lamb or chicken dishes as well as a seasoning for veggies. I use around 4 Tbsp to 500g meat. 

Ingredients

  • 2 Tbsp cumin, ground
  • 1 Tbsp coriander, ground
  • 1 Tbsp dried parsley
  • 1 ½ tsp paprika, ground
  • 1 tsp cinnamon, ground
  • 1 tsp garlic powder
  • ½ tsp pepper, ground
  • ½ tsp allspice, ground
  • ½ tsp ginger, ground
  • ½ tsp turmeric, ground
  • ¼ tsp cayenne, ground

    Method

    Place all ingredients into a bowl and mix well. Store in an airtight container.

    Tip

    Since you will likely use several tablespoons at a time, you may want to double the quantity once you have tested it out on the family.
