Watermelon “Pizza” with Marshmallow Tangy ToppingServes:
Watermelon is the ultimate summer sweet treat – cool, crisp and amazing topped with my Marshmallow Tangy Topping. Add whatever fruit you have on hand to turn this recipe into a playful afternoon snack or summer dessert.
- 90g white marshmallows
- 150g unsweetened natural yogurt
- 4 slices watermelon
- 1 cup berries or chopped seasonal fruit
Place marshmallows in a microwave safe bowl and microwave on high power for 20-30 seconds, stir well and if not completely melted repeat in 10 second increments until smooth when stirred.
Fold in the yogurt and let cool.
Spoon topping onto the watermelon slices and decorate with fresh berries and fruits.
You can swap natural yogurt for your favourite fruity yogurt if you prefer, it will be sweeter though as most fruit yogurts are sweetened. Leftover topping can be stored in the fridge, microwave for a few seconds then stir if it becomes too firm.
