Moroccan Beef Bowl

This savoury beef mince dish is easy to make using my Moroccan spice blend. I serve it on herby roasted vegetable couscous but it’s also good on rice. You can add a salad or cooked seasonal green veggies or top with chopped fresh tomatoes when in season. The recipe for the Moroccan spice blend is in the Seasonings section of the site.

Ingredients

  • 1 tsp oil
  • 500g beef mince
  • 2 cloves garlic, chopped
  • 4 Tbsp Moroccan spice blend
  • 1 tsp sugar
  • 2 400g cans chopped tomatoes
  • ½ tsp salt, approximately
  • A couple of handfuls of baby spinach
  • Zest of a lemon
  • ½ cup Greek yogurt
  • Rice or couscous to serve

    Method

    Heat oil in a medium pan, brown mince, pressing with a masher or back of a wooden spoon, till lightly browned and evenly crumbled.

    Add garlic and cook for 2 minutes then stir in Moroccan spice mix, sugar and tomatoes. Season with salt and simmer for around 10 minutes or until thickened.

    While the meat is simmering cook rice or couscous according to the pack directions. 

    Add the lemon zest to the Greek yogurt, season with a pinch of salt and set aside.

    Stir spinach into meat mixture until just wilted and spoon onto couscous. Top with a dollop of lemony yogurt.

    Tips

    Try the seasoning on beef strips, and stuff into a wrap or pita bread drizzled with the lemony yogurt.
