Teriyaki Pork and Pineapple
Serves:This fast and easy family meal is an easy weeknight option. Add some sliced veg or frozen stir fry veg if you like.
Ingredients
- 1 tbsp oil
- 500g diced pork
- 1 tbsp grated ginger
- 1 430g can pineapple chunks in juice- drained reserving ½ cup liquid
- 1 red capsicum, cut into chunks
- 1 onion, cut into chunks
- 4 tbsp soy sauce
- ¼ cup tomato sauce
- 1 tbsp white vinegar
- ½ cup chicken stock
- 1 ½ tbsp brown sugar
- Salt and pepper
- 1 tbsp cornflour mixed with 1 tbsp cold water
- Toasted cashews and sliced spring onion to garnish, optional
- Cooked rice to serve
